Mix all ingredients except bacon and tomato sauce. Put in a 9x5" loaf pan;
cover with 2 strips of bacon. Pour tomato sauce over meat. Bake 1-1/2
hours at 350~.

Barbecue Meat Loaf

1/4 cup Finely chopped onion
1/4 cup Finely chopped celery
1/4 cup Catsup
Large egg whites
1/4 cup Dry bread crumbs
1 teaspoon Liquid smoke
1 teaspoon Salt
1/8 teaspoon Black pepper
1 pound Ground round
Place all ingredients except beef in mixer bowl and mix at low speed to
blend well.
Add beef to catsup mixture and mix at low speed until blended. Do not
overmix. Shape into a loaf about 3 1/2" x 7". Place in a pan that has
been sprayed with pan spray or lined with aluminum foil. Bake at 325
degrees F.
about 1 hour or until browned and firm. Pour off any fat anddrippings and
let set equal slices. Serve 1 slice per serving.
PER SERVING: calories - 138, carbohydrate - 6 g., protein - 17 g., fat ~

Barbecued Meat Loaf

1 1/2 pounds lean ground beef
1 egg -- lightly beaten
4 tablespoons seasoned bread crumbs
1 tablespoon minced parsley
1/4 cup water
2 tablespoons minced onion
2 tablespoons white horseradish
Salt & pepper to taste
Barbecue Sauce:
1/2 cup chili sauce
3 tablespoons catsup
1 tablespoon worcestirshire sauce
1/2 teaspoon dry mustard
1 Dash tabasco sauce
Combine all above-mixing well with your hands. Shape into a loaf and
place in a greased loaf pan. Top with sauce(recipe below) and bake at 350
for about 45 minutes-may be a bit more if you use more meat.
Sauce: Combine all sauce ingredients and spread over top of meat
loaf-baste the loaf occasionally with the sauce during cooking. This is
great left over for sandwiches.

1 cup Milk
1/4 cup Onion -- chopped
1 teaspoon Salt
1/2 teaspoon Mustard -- Dry
1/4 teaspoon Pepper
1/4 teaspoon Sage
1/8 teaspoon Garlic Powder
1/2 cup Sauce **
1 tablespoon Worcestershire Sauce
* You can substitute 1/2 Cup of Dry Bread Crumbs or 1/2 Cup of Wheat
** You can use catsup, chili sauce or barbecue sauce as a topping in

Heat the oven to 350 degrees F.
Mix all the ingredients except the catsup together.
Spread the meat mixture into an ungreased loaf pan, 9 X 5 X 3-inches or
shape into a loaf in an ungreased baking pan. Spoon catsup onto the loaf
and bake, uncovered, for 1 to 1 1/4 hours or until done.
Drain off the excess fat and serve sliced on a heated platter. NOTE:
For leftover meat loaf, try the following: BARBECUED MEAT LOAF: For four
1/2-inch slices of meat loaf, mix 1/2 cup of barbecue sauce and 2 tb of
water in a skillet. Place the slices of meatloaf in the skillet, turning
to coat all sides with the barbecue sauce. Cover and cook over low heat,
brushing the sauce on the slices occasionally, until the meat is hot,
about 10 to 15 minutes.
POTATO-TOPPED MEAT LOAF: For four 1/2-inch slices of meat loaf, prepare
some instant mashed potatoes, enough for 4 servings, as directed on the
package and set aside. Set the oven control at broil/or 550 degrees F.
Broil the slices with the tops 3 to 4 inches from the heat for 5 minutes.
Spread the potatoes on the slices and sprinkle with shredded Cheddar
cheese. Broil until the cheese is melted, about 2 minutes and serve hot.
SOUPED-UP MEAT LOAF: For four 1/2-inch slices of meat loaf, mix 1/2 to 1
can of your favorite condensed cream soup, such as cream of mushroom, (10
3/4 oz size) and 1/4 to 1/2 cup of milk in a skillet. Heat to boiling,
stirring frequently. Reduce the heat and place the slices in the skilled,
turning to coat all sides with the sauce. Cover and simmer until the meat
is hot, 10 to 15 minutes and serve.

1/4 cup Instant Corn Tortilla Mix
1/2 cup Vegetable Oil
* See Sowest 2 for recipe. Mix ground beef, fully cooked ham, ground
pork, eggs, salt, pepper, and the nutmeg. Shape into a loaf. Cover and
refrigerate for 1 hour. Prepare Chipolte Sauce and set aside. Mix bread
crumbs and tortilla mix. Coat meat loaf with bred crumb mixture. Heat oil
in 10-inch skillet until hot. Cook meat loaf in oil over medium heat until
brown on all sides. Pour Chipotle Sauce over meat loaf. Heat to boiling
and reduce the heat. Cover and simmer until done; about 1 hour.

4 tablespoons Unsalted butter
3/4 cup Finely chopped onions
1/2 cup Green bell peppers -- chopped
1/4 cup Green onions -- finely chopped
2 teaspoons Minced garlic
1 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce
1/2 cup Evaporated milk
1/2 cup Catsup
1 1/2 pounds Ground beef
1/2 pound Ground pork
2 each Eggs -- lightly beaten
1 cup Very fine bread crumbs
Combine the seasoning mix ingredients in a small bowl and set aside.
Melt the butter in a 1-quart saucepan over medium heat. Add the onions,
celery, bell peppers, green onions, garlic, tabasco, Worcestershire and
seasoning mix. Saute until mixture starts sticking excessively, about 6
minutes, stirring occasionally and scraping the pan bottom well. Stir in
the milk and catsup. Continue cooking for about 2 minutes, stirring
occasionally. Remove from heat and allow mixture to cool to room
temperature.
Place the ground beef and pork in an ungreased 13x9-inch baking pan.
Add the eggs, the cooked vegetable mixture and the bread crumbs, remove
the bay leaves. Mix by hand until thoroughly combined. In the center of
the pan, shape the mixture into a loaf that is about 1-1/2 inches high, 6
inches wide and 12 inches long. Bake uncovered at 350F for 25 minutes,
then raise heat to 400F and continue cooking until done, about 35 minutes
longer. Serve immediately as is or with Very Hot Cajun Sauce for Beef.
This is best using both ground pork and ground beef, as the pork gives
more flavor diversity. However, you can make it with ground beef only.

Beat eggs with a little bit of milk in bowl. Add [1] can tomato sauce and
beat. Add onions, pepper and squish meat with hands through all this mess
(wash hands first). Add salt, pepper, etc. to taste. Add a few bread
crumbs to hold it all together and pat into a loaf. Place loaf in electric
frying pan - with a little oil. Pour over remaining tomato sauce. Cook
about 1-1/2 hours at 325~.

except -- stir in the remaining cheese. Spread the potatoes on the sides
and top of the meat loaf. Sprinkle with the crumbled bacon and bake for an
additional 10 minutes, or until the potatoes are lightly browned. Serve
hot.

Crush crackers with rolling pin or blender until crumbled. In mixing

Place in slow-cooking pot. Cover and cook on low for 6 to 8 hours or
until done.

3) Line a 9 x 5 inch loaf pan with foil. Press in the beef mixture.
4) In a separate bowl, combine the topping ingredients, mixing well.
Spread topping over the meat loaf.
5) Bake at 400 degrees for 35 to 45 minutes or until done.
6) Drain off fat. Rest meat loaf 5 minutes before serving. Garnish with
fresh herbs, if desired.

Meat loaf has a peculiar position in American cuisine, for while most
people feel compelled to avow dislike or contempt for the dish, you will
find that secretly they are very fond of it indeed. And why not? It can be
and often is delicious. Texas is the only place I know of, however, where
an admiration for meat loaf is voiced publicly. Here is the basic meat
loaf that you'll come across all through the state.
Combine all ingredients except the tomato sauce in a mixing bowl and blend
thoroughtly. Pack firmly into a well-greased small loaf tin. Smooth top
with a knife or spatula. Pour on the tomato sauce. Bake at 350 degrees F
for 1 hour. Serve hot or cold as desired.

Fast with Five: Chili Meat Loaf Muffins

3/4 cup Medium salsa
1 teaspoon Chili powder
14 ounces Canned red kidney beans -- drained and rinsed
1/2 cup Monterey jack or cheddar -- shredded
This is a fun dish for kids; beans and salsa cupped in ground beef muffins
and baked under melting cheese. Start the meal preparation by putting
potatoes in the oven while you assemble the muffins, then as the muffins
bake, grate carrots for a slaw.
In bowl, break up beef with fork; mix in 1/4 cup of the salsa, chili
powder, 1/2 ts salt and 1/4 ts pepper. Divide into 8 portions; place in
muffin cups. Press centre of each to form a well 3/4 inch deep and 1-1/2
inch wide.
Bake in 400F 200C oven for 10 minutes or until firm to the touch and no
longer pink.
Combine beans and remaining salsa; spoon into wells. Sprinkle with
cheese.
Bake for 7-8 minutes or until beans are hot and cheese has melted. Using 2

marmalade over the whole thing. Bake, uncovered for 1 to 1 1/4 hours.

Heat the oven to 350 degrees F. Mix all the ingredients except the catsup
and brown sugar together. Press the mixture firmly in an ungreased loaf
pan 8 1/2 X 4 1/2 X 2 1/2-inches. Loosen the edge with a spatula and
unmold the loaf in an ungreased baking pan 13 X 9 X 2-inches. Mix the
catsup and sugar then spoon onto the loaf. Bake uncovered for about 1 to
1 1/4 hours. Remove the meat loaf to a plate and let stand for 10 minutes.
Then slice and serve on a heated platter. NOTE: If you don't have a pan
this size, just form the mixture into a loaf in the large baking pan.
VARIATION: Roast Meat Loaf Ring: Press the meat mixture firmly into an
ungreased 5 to 6 cup ring mold. Unmold in the baking pan by rapping mold
against the bottom of the larger pan. Brush with the catsup mixture. Bake
for about 50 minutes. If you desire, the hole in the ring can be filled
with hot potato salad or creamed peas.

within 3/4 inch of the top. Spoon the stuffing onto the mixture in the
pan and then top with the remaining meat mixture covering the stuffing
completely. Bake in the oven for 1 hour and 10 minutes. Drain off the
excess fat and let stand for 5 to 10 minutes before slicing into thick
slices. Serve on a heated platter. MEAT LOAF STUFFING: Melt the butter in
a large skillet. Add the onion and the celery and cook an stir until the
onion is tender.
Remove from the heat and stir in the remaining ingredients.

to 50 minutes. Drain off the excess fat. Mix the tomatoes, garlic,
cornstarch and 3/4 ts salt in a small saucepan.
Cook, stirring constantly, until the mixture thickens and boils.
Boil and stir for 1 minute. Cut the meat loaf into squares and top with
the tomato sauce when you serve it. NOTE: Any type of summer squash can be
substituted for the eggplant in this recipe.

~----------------- Prepare the basic meat loaf -- except spread 1/3 of the
mixture evenly in an ungreased loaf pan, 9 X 5 X 3-inches.
Sprinkle half each of the cheese, zucchini and pimento in layers,
spreading the layers to within 1/2 inch of all sides of the pan.
Repeat the layers ending up with a layer of the meat mixture on the top.
Be sure to cover the layers completely by spreading the mixture to the
sides of the pan. Omit the catsup and bake, uncovered, for 1 1/4 hours.
Drain off the excess fat and let stand for 5 to 10 minutes before slicing
into thick slices. Serve on a heated platter.
